Since ChaosGirl is sick I have two related cooking reports. First, she was watching Maggie and the Ferocious Beast and decided she wanted pumpkin muffins. I made do with what I had on hand and the base of the Really Easy Pumpkin Roll makes quite nice muffins. What I really did was:
1 16 oz can pumpkin
1 c. yellow cake mix
1 box LESS 1 CUP spice cake mix (I wanted it to taste more pumpkin-y)
Mix all the ingredients together and mix with mixer on medium to medium-high for 2-3 minutes or until it looks lighter in color and a bit fluffy. Spoon into muffin cups and bake at 350 degrees for around 15 minutes or until a table knife inserted in the center of one muffin comes out clean. I made 6 mini muffins, 6 regular sized muffins, and one loaf pan with this batch.
The flip side is that when ChaosGirl is sick like this she doesn’t want anything to eat so DH and I can eat whatever we want – which usually involves tomato sauce since ChaosGirl still doesn’t like it. I made homemade sloppy joes last night.
Sloppy Joe Mix
1/3 – 1/2 c. chili sauce
1/4 c. chopped caramelized onions
1 Tbs. tomato paste
1 Tbs. roasted garlic paste *
1 Tbs. brown sugar
1 tsp. California Pepper Blend from Penzey’s (you could sub any blend that includes black pepper and dried red and green sweet peppers)
Mix together in small sauce pan and let simmer for about 5 minutes. Pour over 1 lb. browned, drained ground beef. Mix and serve.
* I roast garlic cloves in the little crock pot with some olive oil wrapped up in foil – you can do it in the toaster over too just keep a close eye on them so they don’t burn. In the crock pot I leave them for about 4 hours.
