I admit it. I eat for comfort. When I am depressed and stressed I crave comfort foods. This past week was so bad that I *really* wanted to commit bodily harm to several people.
I craved chocolate. I craved a specific kind of chocolate though – the kind that come in a molten chocolate cake or a chocolate chip cookies fresh from the oven. The thing is, these sorts of cravings tend to hit late in the evening and I have no energy to bake or go to the grocery. The “cheat” that I do in these situations is an easy one.
“Feel Better” Fudge
1/4 c. chocolate chips (semi-sweet or milk chocolate or lacking that, a Hershey bar will do)
1 Tbs. of Irish Cream Liqueur (or your preferred flavor liqueur or milk in a pinch)
Mix together in a small bowl. Microwave for about 10 seconds. Stir well. If the chocolate has still not melted, microwave for another 5 seconds. Stir very well until it is creamy. Add more liquid if you want to thin the consistency. If you like it sweet and you only have semi-sweet chocolate chips, add sifted powdered sugar 1 teaspoon at a time until it’s sweet enough for you.
I like to eat this with ice cream or Oreos or peanut butter and graham crackers or just plain if it’s been a particularly bad day.
