Here’s a perfect summertime recipe for a good sugar buzz. I got it from my mom who saw it in a magazine at some point. There are several versions on the web but this is what I do:
Cool Strawberry Dessert
1 angel food cake (store bought or made from mix)
8 oz cream cheese, softened (I use neufchatel)
2 c powdered sugar, sifted
12 oz cool whip, thawed (I use light)
1 1/2 lbs strawberries, quartered or sliced
2/3 of a package of Wicks strawberry glaze
In a large bowl, mix the cream cheese and the powdered sugar together. Stir in the cool whip. Tear or cut the cake into around 1″-2″ pieces and fold them into the mixture. Spread the cake mixture in a 10″ x 16″ or so dish. In another bowl mix the strawberries and glaze together. Spread the strawberries over the cake mixture. Refrigerate for at least 2 hours before eating.
You can also do this with blueberries and blueberry glaze or peaches and peach glaze.
