I did a bit of cooking over the weekend and this one is worth sharing. Yes, it’s another variation of ham and sweet potatoes but with a twist. It’s based on the Scalloped Potatoes and Ham from Food Network. I used my apple peeler/slicer to prepare the sweet potatoes which worked pretty well.
Scalloped Sweet Potatoes and Ham
2 Tbs. butter
2 Tbs. flour
2 c. milk
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. Garlic Powder
1/2 tsp. Nutmeg (or more if you prefer)
1/2 c. caramelized onions
1 or 2 large sweet potatoes, peeled and thinly sliced
1 c. cubed ham (I used turkey ham)
2 c. shredded Monterrey Jack/cheddar cheese blend
Preheat oven to 350 degrees. Spray 2 quart baking dish with non-stick spray. In a saucepan, melt butter then stir in flour and cook for around 1 minute. Add milk and stir well. Add salt, pepper, garlic, and nutmeg. Summer until sauce has thickened stirring regularly.
Layer the sweet potatoes, onions, ham, cheese, and sauce in 2-3 layers making sure to top with the last of the cheese. Bake for 45 minutes to 1 hour or until golden and bubbly.
On reflection, I could have added a smidge of Red Hot to the sauce just for a little more kick. I’ll try that next time and see how it goes. It warms up very well in the microwave.
