I got a lovely comment about the recipes which, combined with the fact that ChaosGirl ate meatloaf for the first time in her life this week, here is my basic meatloaf recipe.
2 lbs moderately lean hamburger*
1 packet Lipton Beefy Onion soup mix
1/2 c. plain dry bread crumbs (the kind you buy in a canister)
1-2 Tbs. steak sauce
1/4 c. bar-b-que sauce (I use a hickory smoke flavor)
1 heaping Tbs minced roasted garlic (the kind in the little jars that go in the fridge)
Mix together and put in loaf pan. Top with more bar-b-que sauce and bake for about 1 hour at 350 degrees.
This also makes really good hamburgers. Since I tend to make meatloaf the weekend before and stick it in the fridge to cook later in the week, the day I made it I took part of the mixture and made a largish patty and cooked it to medium on the George Foreman grill. DH was very happy with the result.
* 90% lean works well. I use half ground venison which is almost 100% lean and half 80% lean hamburger.
I have an Apple Honey cake recipe I’ll be trying again this weekend and will post next week. We get to eat together as a family twice out of the 5 week days this week so not a lot of “real” cooking going on.
