ChaosGirl wants me to make oatmeal raisin cookies – despite the fact that she doesn’t like raisins. These turned out to be some of the yummiest I’d made as I tried a couple of different things and thought I’d share. Click “Read more” at the bottom for the recipes.
Oatmeal Cookies (3 varieties)
1 stick margarine
1/4 c. applesauce
1 c. brown sugar
1/2 c. white sugar
1 tsp. vanilla
1/4 c. water
3 c. old fashioned oats (not quick or instant)
1 c. flour
1/2 tsp. cinnamon
1/2 tsp. baking soda
1 tsp. salt
Cream the margarine, applesauce, and sugars together and mix in the egg, vanilla, and water. Stir in all the dry ingredients. Drop by rounded teaspoons onto a cookie sheet and bake for 10-12 minutes at 350*
This is version one. Yummy in and of itself because of the carmelization that occurs when you make the crockpot applesauce which you can taste in the cookie.
For version two, add raisins (but don’t expect ChaosGirl to eat them unless you use golden raisins and you can convince her they are something else)
For version three – my personal favorite – add peanut butter. I separated the batter out into thirds and did 1/3 each way so I only added about 2 Tbs of peanut butter to 1/3 of the total batter. If I did the whole thing I’d probably add about 1/4 – 1/3 c. I used the creamy, sugar-free (possibly organic, I’m not going to dig it out of the refrigerator right now to look) that I bought when ChaosGirl wouldn’t touch my extra-crunchy PB. It has been sitting, abandoned in the fridge for a few months now that she’s decided crunchy isn’t so bad.
