I noticed a dearth of recipes lately and since today has nothing good to blog about, here is a good and very easy recipe that you can make up with ingredients you probably have on hand. I use my little 2 qt. crock for this but you could double it up and use a bigger crock for company. This is a recipe that probably originated with Weight Watcher and was posted to the Slowcooker Yahoo group a few months ago. It originally used brown sugar substitute but I just don’t care that much.
Crockpot Peach “Dump” Dessert
1 large can sliced peaches (preferably “light” version)
1 Tbs cornstarch
1 tsp vanilla
1/4 cup brown sugar
1/4 tsp cinnamon
3/4 cup white or yellow cake mix
4 Tbs margarine
Lightly grease the crockpot; place peaches in the bottom. Sprinkle with cornstarch; toss. Drizzle with vanilla and sprinkle brown sugar overall. Sprinkle with cinnamon then cake mix. Cut up margarine and scatter over the top. Cover and cook on low for 3 to 3 1/2 hours.
Yumminess with vanilla ice cream.
