Remember the pot roast recipe a few months back? I had been told by the lovely and wonderful folks on the crock pot Yahoo group that you can adapt it for chicken and it’s just as good. Well, Kroger had frozen turkey breasts on sale so I picked up a couple and cooked up one of them this week. It’s definitely a winner!
3-Envelope Roast Turkey
1 4-6 lb turkey breast (or what will fit in your crockpot) (thawed)
1 envelope chicken gravy mix
1 envelope ranch dressing mix (I had buttermilk ranch)
1 envelope Italian dressing mix
3-4 small potatoes, scrubbed and quartered
Spray crock pot with non-stick spray. Put the turkey breast in and surround it with the potatoes. Mix the three envelopes together in a bowl. If you have a smaller turkey breast place half the mixture in a ziploc baggie and save for next time. Sprinkle some over the turkey. Mix a little water with the rest and pour over top. Cook on low for around 8 hours.
You could also toss in some carrots if you like.
