The slogan was something like “Sunday taste for Tuesday effort.” Well, DH loved those things (he’s a big stuffing fan) and I’ve found a crock pot recipe that is very similar. This is adapted from one Wendy posted to the crockpot Yahoo group that she got from Jaqueline on another recipe group.
Crockpot Chicken Stuffing Casserole
2 boneless skinless chicken breasts
2-3 boneless skinless chicken thighs
1 regular size box Stove Top cornbread stuffing mix
1 1/3 c. frozen french cut green beans
1/3 c. cream soup mix cooked up with 1 1/4 c. water
1 c. shredded cheese (I used half cheddar, half mozzarella)
1/3 c. carmelized onions
1/3 c. chopped celery (I buy celery and chop it and freeze it so I always have some on hand)
Lightly spray crockpot with non-stick spray and place chicken in the bottom. Mix together remaining ingredients and place on top of chicken. Cover and cook on low for 6 to 7 hours.
This got two thumbs up from DH and doesn’t warm over too badly either. I made it up the night before and had DH pop the crock in the pot at lunch time the next day. I wouldn’t recommend putting it in when you leave in the morning and expecting good things when you get home unless you have a pot that will cycle to “keep warm” after about 6 hours.
