I finally got around to it and it turned out great. It’s a variation of a recipe from a crockpot Yahoo group list.
3-Packet Pot Roast
1 roast that will fit into your crockpot
1 packet Ranch Dressing Mix
1 packet Italian Dressing Mix
1 packet Brown Gravy Mix
3-4 potatoes, scrubbed and quartered (you could peel them if you want, I don’t)
1/2 c. frozen chopped onion
1 1-lb bag baby carrots
1/2 c. frozen chopped celery (optional – I had some so I threw it in)
Place veggies in crock pot. Combine the dry mix packets together and use like a dry rub on your roast. Basically coat the roast in the mix. Lay the roast in your crock pot on top of the veggies. Cook on low 8 to 10 hours.
I used a frozen roast and just ran some warm water over it for a minute before dusting it with the mix to make sure it stuck. I had it on high for an hour or so but if you’re gone for 9-10 hours even frozen solid at the start it should be done. Look at the sodium content on the packets and pick the lowest sodium possible. You should have enough mix from the three packets to do two roasts.
