I tried this one last night and I think next time I will use salmon instead of crab. They are very easy and fast but I couldn’t taste the crab enough for my preference. DH liked them though. The recipe if from the back of a box of Stove Top Stuffing The other thing you could do would be to put the stuffing mix in a colander and shake out some of the seasoning. I’ll try that also the next time and let you know how it works.
Quick and Easy Crab Cakes
1 cup boiling water
1 6-oz package Stove Top Cornbread Stuffing Mix
3 eggs, lightly beaten
2 6-oz cans crabmeat, drained and flaked
1/4 c. butter or margarine
In a medium bowl, add the boiling water to the stuffing mix and stir till just moistened. Let sit for 5 minutes.
Mix eggs and crabmeat in a large bowl. Add the stuffing. Mix well.
Shape into 8 patties.
Melt butter in skillet and fry patties 4-5 minutes on each side.
