So this is turning into School Work Cook-in-the-crockpot Knit blog. Yeah, but I have become very enamored of crockpot cooking and it’s helping me to keep what little sanity I have left. I tried this recipe on Monday and it got the “thumbs up” from DH and ChaosGirl as well as friend of DH’s who happened to be over. It’s from Myron on my crockpot Yahoo Group.
Crock Pot Pineapple Pork Roast
3-5 lb. pork roast, browned
1 onion, sliced (I used about 1 c. of the caramelized onions I have frozen)
1/2 red bell pepper, coarsely chopped
2-3 carrots, cut into circles
1/4 c. brown sugar, not packed
1 can crushed pineapple
2 tbs. tomato paste
2 tbs. soy sauce
salt, pepper, and ginger to taste
Add the pork roast to the slow cooker after browning it. In the same pan you
browned the roast in, add the remaining ingredients. Stir together to blend and
add to the cooker. Cook on low for 8 hours.
I’m not sure browning it made any kind of difference but I did it since Myron said to. Next time I probably won’t bother.
